Food Coloring 101
Welcome back to The Nest! Today I’m inviting you into my kitchen to talk about something that plays a big role in every cookie I create: coloring my icing!
Over the years of running Little Owls Bakery, I’ve experimented with all kinds of food coloring options. One question I often get from customers is about the difference between classic food coloring and all-natural food dye and more importantly, why I offer both.
Classic food coloring is what many of you are probably familiar with, food dyes that allow me to create vibrant and bold colors that really pop on a cookie, which you can see in the photograph to the right. When I opened Little Owls Bakery in 2020, I actually only offered classic food coloring.
However throughout the years I found myself researching and experimenting with alternative food dye options and I quickly noticed a few key differences between the dyes. Whereas regular food coloring creates bold colors, plant-based food colorings create softer and more muted tones, which often fade faster. Not only that, all-natural dyes also expire at a quicker rate than regular food coloring, so I have to replenish my stock more frequently.
The companies who offer all-natural dyes are constantly working to improve their product, as you can see the clear difference between my July 2023 Subscription Box and the two more recent sets of cookies to the right.
The reason I offer both options is because of health preferences and personal comfort. I know that some customers prefer to avoid artificial dyes, whether due to sensitivities, dietary choices, or simply peace of mind. Having an all-natural option allows me to create something just as special while honoring those needs.
As a home baker creating custom cookies, it’s important to me that everyone feels confident and comfortable with what they’re ordering. Cookie Tip #6:
To make sure my icing has an even finish I always make sure to flip a cookie over before decorating. As you can see below, the bottom of the cookie is always flatter than the top, allowing for a much smoother finish. However, be aware that depending on the cookie cutter's design, this might mean baking the cookie in reverse. See the before and after below!
